Even with numerous notable achievements under his belt Andrew Beckford humbly refers to launching Beckford Catering Company, his first solo venture, as his biggest accomplishment to date. First becoming an executive chef at the age of 28, Red Seal Certified Chef Beckford's love for cooking began at an early age and only has expanded over the years.  Andrew's lasting memory as child is of feathering, butchering and frying his first chicken with his grandmother in Jamaica, “It was so gratifying to be involved in the whole process from beginning to end. That inspired me.”

 

After returning to Kitchener-Waterloo in 2014, Beckford worked as Sous Chef for Proof Restaurant and Lounge, before deciding to venture out on his own. Beckford Catering Co is the natural progression of a career that has involved a number of jobs that have focused on catering events, “Plating large dinners and high profile events gave me the perspective needed to understand the logistics of serving many people at once, or in more than one location at the same time.”

 

Starting in 2011, Beckford worked in Toronto at the Corporate Catering and Event Management team with Oliver & Bonacini, where he executed elaborate meals and cutting edge canapés for events such as the Toronto International Film Festival (TIFF) and Winterlicious, as well as high profile political and business lunches. This busy and exciting time allowed Beckford to hone his chef skills when planning, plating and executing events, both big and small.

 

Andrew achieved his Red Seal Certification in 2007, an accomplishment that fuelled his desire to increase his culinary knowledge and broaden his horizons, eventually landing in Vancouver at the storied Fairmont Waterfront Hotel. In this role, Beckford became passionate about Ocean Wise ethics and maintaining a sustainable seafood menu and featuring fresh items harvested from their elaborate rooftop gardens and apiaries.

 

Beckford’s career began right here in Kitchener Waterloo back in 2000, with his first full time cooking job at the Charcoal Steakhouse. In 2005 he accepted his first Executive Chef position at the Rude Native Bistro, a position that allowed him to explore international flavours and showcase his Jamaican roots.
